Yummy Ginger Biscuits



These yummy ginger biscuits are super easy to make and probably wont last long in your pantry!



  • 2 cups of almond meal/flour
  • 1/3 cup coconut sugar
  • 2 and 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 80g of softened butter
  • 1 egg white 
Combine all the dry ingredients in a bowl. 

Add the softened butter into the bowl and blend everything with an electric mixer or in a food processor until the mix is crumbly.

Beat the egg white until it is stiff, then gently blend it into the crumb mix. 
Mix into a dough.

Roll out the dough mix until it is thin. You may want to do this between two sheets of baking paper so the dough does not stick to the bench.

Leave in the fridge for about 10min.

Preheat the oven to about 160 degrees celsius.

Remove the flattened dough mix from the fridge. Use cookie cutters to make shapes. 

Carefully use a spatula to move the cookies to a tray that is lined with baking paper. 

Bake for about 8 minutes or until just golden. 

Let these cookies cool completely before handling, either to EAT or store in an airtight container.
