Zucchini & Bacon Fritters
There is nothing more simple and yummy than grilled zucchini on the BBQ.
With a bit of extra virgin olive oil, salt, and crushed garlic a simple yet delicious side for any dish you plan on making over the summer.
Also known as courgettes, I have planted some yellow and green zucchini in my vege patch this year and am hoping this year will be another bumper crop as it was last year.
Zucchini is high in fiber making it a great vegetable for healthy digestion but is also a great source of vitamin A, which is important for immunity, skin health and also for eye health.
It also contains vitamin B6 and folate, as well as vitamin C. Zucchini has been researched for its antioxidant and nutrient components and was shown to have DNA protective health properties.
So although I like the simple grilled courgette on the BBQ, check out this yummy snack or breakfast idea.
Zucchini & Bacon Fritters
Serves one
- 3 handfuls of grated zucchini
- 2 eggs
- 1 tbsp. Almond meal or Coconut flour
- 1 tbsp. Extra Virgin Olive Oil
- Cracked pepper and sea salt to taste
- 2 rashers of cooked NZ bacon
Combine all the ingredients except the olive oil into a bowl. Stir
until well combined.
Heat oil in a large pan on medium to high heat.
Mould mixture into
medium size balls and press flat into the pan. When slightly golden turn and
cook the other side.
Serve with bacon on the side, or if you wish, chop the cooked bacon and
add to the mould mix.
