I love this recipe from Elana's Pantry which I have been using for a few years now. I have adjusted the original recipe to increase the number of muffins it makes but also have added in dark choc pieces and frozen berries. 

This yummy combination is a 10/10 hit with the kids!

Super easy to make and they store well in a container for about 4-5 days. 

  • 2 cups of almond meal 
  • 4 eggs
  • 1 tbsp of PURE Maple syrup or honey (reduce to half if using dark choc chips)
  • 1/2 tsp Baking Soda
  • 1 tsp Apple Cider Vinegar
  • 1/2 tsp Vanilla Extract

This is the base recipe which you can play around with easily or just use on its own. 

For my choc chip berry flavour

  • 1/2 cup of frozen berries 
  • 1/2 cup of dark choc chips

In a bowl combine all the dry ingredients and mix well. 

In another bowl combine the maple syrup, eggs, vanilla, apple cider vinegar and whisk well. 

Stir the dry ingredients along with the berries and choc chips and into the wet mix and stir until combined. 

Line a muffin try with muffin liners - and scoop mix into each liner. 

Bake in a preheated oven on about 160-180 degrees Celsius, until just browned. 

Once done, let them cool in the pan for about 20 minutes.
