Winter Shepherds Pie

You cant beat a Shepherds Pie in during winter. There is something quite yummy about all those veges hidden away in the mince and mash. 

This is a great way to get some veges into kids that are fussy. Dice them up small enough and they should (hopefully) never know!

This a great meal to get ready on the weekend for the busy week ahead and if you get the kids involved they (usually) end up eating more of it. 

This is an easy dish that you can play around with, so use your imagination!


Ingredients

Topping
3 large kumara peeled and diced
2 tbsp butter (or coconut oil if trying dairy free)
1 and 1/2 tsp of sweet paprika
1 tbsp Pink Himalayan or Sea Salt

Filling
500g lamb or beef mince
2 zucchinis grated
1 large onion finely chopped
2 cloves of garlic finely chopped
1 broccoli coarsely chopped 
1 can diced tomatoes
1 tbsp Extra Virgin Olive Oil (or coconut oil)
2 tbsp fresh or dried oregano
1 tbsp fresh or dried rosemary
2 tsp cumin powder
2 tsp coriander powder

Method

  • In a large pot place the kumara and place enough cold water to just cover. Bring to the boil and reduce to a simmer until the kumara has just softened. Once cooked, drain and leave to the side.
  • Preheat you oven to 200 degrees Celsius. 
  • In a large pan on a medium heat, heat the oil and then add your mince, onion and garlic. Cook till the mince is browned. 
  • Add the zucchini, broccoli and herbs and stir to combine.
  • Add the can of diced tomatoes and stir in.
  • Add salt and pepper to taste.
  • Transfer the mince mixture into a baking dish and spread out evenly.
  • Once your kumara is cooked and drained, add butter (or coconut oil), paprika and salt and mash thoroughly.
  • Spread the kumara mash over the mince mixture evenly.
  • You can add some final spices or herbs on top of the mash if you wish.
  • Bake in the oven for about 30min until the top has just browned.
