Yummy Anzac Day Biscuits




This year in New Zealand Anzac Day is going to be quite different. With still being at Level 4 Covid-19 lockdown, for the first time since 1915 when the first Anzac commemoration took place, New Zealand is not able to hold its traditional service to remember Anzac Soldiers who have died in battle for our countries. 

Our family will still be getting up early though to take part in the "Lets not forget" dawn service taking place at the end of our driveway. In the meantime, we cannot forget the wonderful Anzac biscuits! My kids make these every year and I think this year will be the first time that we will probably make a few extra batches! 

So here is a recipe that I got off the internet so long ago I can't even remember who supplied it. What I do remember is that I changed the recipe so it does include Maple Syrup. The original had erythritol which I am not a fan of, I don't really like the flavour. But you can play around with your preferred sweetener remembering that the whole idea is to reduce the sugar load as much as you can (especially off the back of Easter treats!).
 

Anyways I hope you enjoy making them and eating them!

Recipe:
  • 1 cup almond meal
  • 1 cup shredded coconut
  • 1 cup of finely chopped walnuts (or macadamias which I prefer)
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup (or coconut sugar)
  • 1 tsp baking powder
  • 1 tsp water
Preheat the oven to about 120 degrees Celsius.

In a large mixing bowl mix the almond meal, shredded coconut and walnuts (or macadamias). 

In a small saucepan heat the coconut oil with maple syrup or coconut sugar. 

Add in the baking powder and water and mix thoroughly and it foams.

Pour into the dry ingredients and mix well. You may need to use your clean hands to get this well mixed. 

Take spoonfuls of the mix and form a firm ball and place on a lined baking tray and flatten each ball.

Place in the oven for about 30min or until just golden. Be careful that the underside do not burn.

Allow to cool completely and the biscuits will harden.
